Ingrédients pour le Pain :

  • 500 gr farine à pain
  • 300 ml eau tiède
  • 1 sachet de levure de boulanger sèche
  • 1 c. à c. sucre
  • 2 c. à c. sel
  • 2 c. à s. huile olive

Ingrédients pour la Garniture :

  • 200 gr tzatziki
  • 200 gr tarama
  • 150 gr feta
  • 150 gr graviera (ou kefalotyri)
  • 150 gr kasseri
  • 200 gr poivrons rouges grillés
  • 150 gr louza (filet de porc séché)
  • 150 gr pastourma (boeuf séché aux épices)
  • Olives kalamata pour la décoration

Instructions
 

Instructions pour la préparation du Pain :

  • Dans un bol, mélangez la levure et le sucre avec un peu d'eau tiède. Laissez reposer pendant 10 minutes jusqu'à ce que le mélange mousse.
  • Dans un grand saladier, mélangez la farine et le sel. Faites un puits au centre et ajoutez la levure activée et l'huile d'olive.
  • Ajoutez progressivement le reste de l'eau tiède tout en mélangeant jusqu'à obtenir une pâte homogène.
  • Pétrissez la pâte sur une surface légèrement farinée pendant environ 10 minutes jusqu'à ce qu'elle soit lisse et élastique.
  • Placez la pâte dans un bol légèrement huilé, couvrez d'un linge humide et laissez lever dans un endroit chaud pendant environ 1 heure ou jusqu'à ce qu'elle double de volume.
  • Huilez votre emporte-pièce puis farinez-le. Dégazez la pâte. Mettez ensuite votre pâte à l'intérieur et attendez jusqu'à ce qu'elle pousse une deuxième fois et forme une boule. Attention à ce qu'elle ne déborde pas, puis passez à l'étape suivante en attendant.

Cuisson du Pain :

  • Préchauffez le four à 220°C (430°F).
  • Enfournez pendant 30-40 minutes jusqu'à ce que le pain soit bien doré et sonne creux lorsque vous tapotez le dessous. Cela dépend également du type de four.
  • Laissez refroidir complètement sur une grille.

Préparation des Garnitures :

  • Coupez la feta, le graviera et le kasseri en petits morceaux.
  • Coupez les poivrons rouges grillés en lanières.
  • Disposez les louza et pastourma en tranches fines.

Montage du Pain Surprise :

  • Une fois le pain refroidi, coupez le haut du pain pour créer un "chapeau" et évidez délicatement l'intérieur du pain en laissant une croûte épaisse.
    Commencez par faire le tour de la croute à l'intérieur puis faire trois incisions que se rejoigne en Y avec votre couteau à un centimètre au dessous du socle de votre pain. Le gros bloc de mie devrait alors sortir normalement. N'hésitez pas à regarder la vidéo pour cette étape.
  • Remplissez les petites sandwichs avec les différentes garnitures : tzatziki, tarama, des morceaux de feta, de graviera, de kasseri, des lanières de poivrons rouges grillés, et des tranches de louza et pastourma.
    Le but est que vos tranches soient fines et qu'elles se tiennent entre elles. Si vous n'êtes pas très à l'aise, utiliser des petits pots déjà prêt de crème type tarama et tzatziki et étaler.
  • Remettre ensuite les différents sandwichs dans la croute du pain.
  • Replacez le "chapeau" du pain.
  • Décorez avec des olives kalamata ou les restes de vos sauces a côté pour que vos invités puissent manger à la fin la croute de votre pain.
