For many centuries, health and wellness experts have touted the importance of naturally derived olive oil as a nutritious tonic for the entire body. The Legacy is timeless: it is tested through time and reproduces the methods passed down by wise and honored producers, while remembering the wholesome moments of the old family.

This is an olive oil which, as its name suggests, comes from the past. It encapsulates the effort of our ancestors to bring to the table an olive oil appreciated by the youngest members of the family as well as the oldest. It is an everyday olive oil, designed for all uses, revealing fine aromas, moderately spicy notes, while being composed of a balanced variety of Athinoelia (60%), Koroneiki (35%) olives. %) and Asproelia (5%) in their golden form.

The term Legacy denotes the preservation of heritage. This product unveils the heritage and natural production procedures required to produce extra virgin olive oil in its most ancestral form. It was produced from truly aged trees located in our mountain olive groves, located at an altitude of 500 to 550 meters. Our oldest tree in this olive grove is over 800 years old, which represents 12 generations. These old-fashioned olive groves have difficult, uneven terrain and have been left in their original form, without any disturbance. In this way, we have respected the effort and the way in which these trees have survived through the centuries while allowing them to complete their life cycle.

In accordance with traditional growing techniques, to create this olive oil we followed classically established practices. To keep The Legacy Olive Oil “just like it was before”, all manual work is done by hand, including trimming, trimming, collecting, etc. This process is both expensive and time-consuming, but it fits our vision of creating a truly artisanal product. This heritage is combined with cutting-edge cold extraction methodologies that capture its core original essence, thereby bottling it.

The term Classic Harvest refers to the period during which the fruit of the olive tree was harvested. The harvest schedule for this range has been planned during the olive tree’s ripe season, which in Peloponnese begins at the end of November and ends at the end of December, following the natural life cycle of these trees. Modern techniques, international market trends and panels seek and reward the unripe olive. In this category we represent something more original and rooted.

Organoleptic characteristics:

The fruit is in its ripe form. Olives harvested between November and December. Rich in phenolic components, with 300 polyphenols per 20 g of product. Filtered as much as possible, leaving no residue (scum or gossypol).

What to expect from this oil:

Transparent and light oil texture; Mild flavor with a fine aromatic profile; Main aroma of freshly cut grass; Medium to low intensities of bitterness and spice; Ideal for daily use. Pour it without fear into your cooking and daily dishes.
