The “Kalamata” olive is a large olive, dark brown or black in color, with a smooth, fleshy texture, named after the town of Kalamata in the southern Peloponnese, Greece. Often used as table olives, they are typically preserved in brine, vinegar, or olive oil. “Kalamata” olives, which cannot be harvested green, must be picked by hand to avoid bruising.
