Thriving at over 1000 meters in high altitude rocky landscapes, mountain thyme flowers from late August to October, producing the precious mountain thyme honey with its rich red hue, dense texture and exceptional aroma. Abundant in metals such as iron and copper, this honey offers powerful stimulating and antiseptic properties. Its natural crystallization occurs shortly after harvest, influenced by weather conditions, particularly requiring rain for flowering, while drought or harsh weather conditions can stop its growth.
