Traditional Greek Taramasalata
Here's a traditional Greek recipe for taramasalata, a delicious spread made with tarama, bread and olive oil. Perfect for a Greek-style aperitif or to accompany a seafood dish.

- 200 gr tarama
- 100 gr stale bread
- 1/2 Red onion thinly sliced
- 1 citron for its juice
- 150 ml olive oil
- 1 T tablespoon white wine vinegar
- 1 garlic clove pressed
- 1 pinch pepper
Dip the bread in lukewarm water for about 5 minutes, then squeeze it out well.
Put the tarama in a bowl, add the bread and whisk until you obtain a homogeneous paste.
Slice the red onion and press the garlic. Add them to the bowl and whisk again.
Add the olive oil little by little while whisking until the texture is smooth and creamy.
Add the lemon juice, white wine vinegar and pepper. Whisk one last time to mix all the ingredients well.
Place the spread in the refrigerator for at least 30 minutes before serving.
