Grilled Chicken Souvlaki

Ingredients
  

  • 500 gr chicken fillets cut into 2-3 cm pieces
  • 3 T to s. olive oil
  • 2 T to s. fresh lemon lemon juice
  • 2 cloves of garlic chopped
  • 1 T to s. dried oregano
  • 1 T to c. dried thyme
  • 1 T to c. paprika
  • 1/2 T to c. pepper ground
  • 1/2 T to c. this

Instructions
 

  • Prepare marinade: In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt and pepper.
  • Marinate the chicken: Add the chicken pieces to the bowl and mix well to coat with the marinade. Cover and marinate in the fridge for at least 2 hours, or overnight for extra flavour.
  • Preheating the grill: If you're using wooden skewers, soak them in water for 30 minutes before use to prevent burning. Preheat grill or barbecue to medium-high heat.
  • Assemble skewers: Thread chicken pieces onto skewers, leaving a small space between each piece for even cooking.
  • Grill chicken: Place skewers on hot grill and cook for about 10 minutes, turning halfway through, until chicken is cooked through and lightly browned.
  • Serving: Remove skewers from grill and serve hot, accompanied by pita bread, tzatziki, fresh tomatoes and red onions.
