- 500 gr chicken fillets cut into 2-3 cm pieces
- 3 T to s. olive oil
- 2 T to s. fresh lemon lemon juice
- 2 cloves of garlic chopped
- 1 T to s. dried oregano
- 1 T to c. dried thyme
- 1 T to c. paprika
- 1/2 T to c. pepper ground
- 1/2 T to c. this
Prepare marinade: In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt and pepper.
Marinate the chicken: Add the chicken pieces to the bowl and mix well to coat with the marinade. Cover and marinate in the fridge for at least 2 hours, or overnight for extra flavour.
Preheating the grill: If you're using wooden skewers, soak them in water for 30 minutes before use to prevent burning. Preheat grill or barbecue to medium-high heat.
Assemble skewers: Thread chicken pieces onto skewers, leaving a small space between each piece for even cooking.
Grill chicken: Place skewers on hot grill and cook for about 10 minutes, turning halfway through, until chicken is cooked through and lightly browned.
Serving: Remove skewers from grill and serve hot, accompanied by pita bread, tzatziki, fresh tomatoes and red onions.
