Makryonitis’ handcrafted Greek tsipouro is born in Syros, in the heart of the Cyclades. It comes from Cycladic grape marc. The producer collects these marcs from small island wineries.
Three grape varieties are used: Monemvasia, Assyrtiko and Serfiotiko. As a result, the distillate expresses a profile faithful to the Cycladic terroir.
Slow fermentation, then distillation over 12 hours
First, the producer ferments the pomace slowly and under controlled conditions, at low temperature, so that this artisanal Greek tsipouro distillate retains its primary aromas.
He then distills on a 12-hour cycle, precisely separating the core from the distillate. The result is a clean, well-balanced distillate.
Maturation and distillate character
After distillation, tsipouro matures for at least six months before bottling. In this way, the aromas gain in balance and finesse.
The distillate is 38% vol., a degree that supports the aromatic expression without dominating the tasting. The producer describes discreet aromas, representative of the land of the Cyclades.
Finally, this handcrafted tsipouro, made in Greece, receives an award at an international competition in Thessaloniki.
