A company based in Trikala/Meteora, which combines local viticulture, traditional distillation and ambitions for international recognition.
Geographical and historical roots
The Tsililis distillery-winery is located in the Trikala region, near the famous Meteora rocks in Thessaly. According to their description, the Tsililis family was “the first to bottle Thessalian tsipouro” (recognized GI).
Formally founded in 1989, the region is steeped in winegrowing history, with vines cultivated here from Byzantine times onwards.
The setting is unique: the vineyards, moderate continental climate, altitude and schist-clay soils give Tsililis a distinctive grape profile.
A dual activity: winemaking and distillation
It’s not just a winery. Tsililis combines two worlds:
The vinification of rare Greek grape varieties, one example being the “Edenia” range (rosé, etc.) produced by Tsililis Terres.
The distillation of tsipouro, a traditional distillate of grape marc, with and without aniseed, sometimes aged in barrels (“Dark Cave Aged Tsipouro”).
This hybridization gives Tsililis a unique identity: not just wine, not just spirits, but a complete player in Greek grapes and terroir.
Raw materials and terroir, the Tsililis signature
The terroir of Meteora & Trikala provides special conditions: altitude, specific soil, dry climate. Tsililis emphasizes the balance between tradition and technology: modern vinification, controlled distillation, tasting glasses and respect for local varieties.
When it comes to tsipouro, for example, the house uses rigorously selected pomace, traditional stills and sometimes cellar aging, hence the “Dark Cave” version.
In wine, the Edenia range is based on the expression of grape varieties such as Limniona or Syrah on these soils.
