Pathos is an ultra-premium, organic, single variety extra virgin olive oil. It is made from Koroneiki olives harvested by hand on the slopes of Mount Psiloritis in Kavalaria (Crete), using a process that respects both the fruit and the environment.
Geographical origin: Organic family orchard located in the hills of Kavalaria, 350-550 m above sea level, at the foot of Mount Psiloritis.
Early ripening: olives are hand-picked while still green (early harvest), and cold-pressed (<24 °C) a few hours after picking to preserve freshness and aroma.
Gentle extraction: All phases are carried out using natural, chemical-free methods, guaranteeing a healthy oil with very low acidity (<0.15%).
Sensory profile & health benefits
Aromas: Intense green fruity, with notes of fresh grass, apple, artichoke, green bell pepper and almond.
Taste: Perfect balance between fruitiness, light bitterness and persistent spiciness – the hallmark of a richness in active compounds.
