A project born on an island where there was no brewing

When Microbrewery of the Cyclades set up in Tinos, the island had no outstanding brewing tradition.
The challenge was to create a beer that spoke the language of the Aegean: fresh, clean, tautly aromatic, but also structured, precise and stable – essential qualities for surviving the hot climate and exporting.

This island setting has had a profound influence on the brewery’s philosophy.
The light, wind and minerality of the Cycladic landscapes become imaginary reference points for the recipes.

A range designed for consistency and variety

Nissos Pilsner

Pilsner is the heart of the house: a clear, bright beer inspired by the Central European style but adapted to the Mediterranean climate.
Measured bitterness, light malt, discreet floral bouquet.

Nissos All Day Organic

Organic, light, gluten-free versions.
A deliberately accessible style, built around drinkability.

Nissos Tholi (Keller)

Unfiltered beer, more cloudy, based on expressive yeast.
Develops more body on the palate and a more generous aromatic range.

Nissos “7 Beaufort

A denser, more powerful beer, inspired by beers for laying down.
Its alcohol/aroma balance sets it apart in a Greek landscape where strong beers are rare.

This range testifies to a consistent effort to occupy a complete territory, from everyday life to tasting.

Production methods: technical mastery and consistency

The Microbrewery of the Cyclades implements an approach in which each style is based on a clear triptych:
– selection of controlled raw materials,
– strict respect of temperatures,
– sufficient ageing time.

The technique is inspired by German and Belgian traditions:
controlled fermentation, cold storage, precise use of hops, the search for balance rather than aromatic excess.

This rigor explains the consistency found from one vintage to the next, a critical point for an island brewery.

A strong identity in the Greek landscape

In Greece, microbreweries often spring up in urban or mountainous areas.
Nissos is a notable exception: an island brewery that claims its origins as a strength of identity.

The international awards received by Nissos testify to the brewery’s ability to go beyond the “vacation beer” register, by assuming a premium positioning accompanied by high technical standards.

FAQ: Frequently asked questions about craft beers (Microbrasserie des Cyclades - Nissos)

Why are some craft beers more bitter than industrial beers?

The bitterness comes from the hops. Craft breweries often use more aromatic or bittering hops to give relief, unlike the more neutral industrial lagers.

Is unfiltered beer better than filtered beer?

It’s not a question of quality, but of style. An unfiltered beer keeps yeast and particles in suspension, giving it more body and a fuller aroma profile.

Are gluten-free beers really "real beers"?

Yes, they are brewed normally, and then the enzymes break down the proteins responsible for the gluten. The taste depends more on the recipe than on the gluten-free.

Why are some Mediterranean beers lighter?

The warm climate influences preferences: consumers look for freshness, low bitterness and drinkability, resulting in lighter beers than Northern European styles.

Which beer should you choose to accompany fish or seafood dishes?

Pilsner or floral lagers work well: they refresh, respect iodine and accompany without dominating.
