Tzatziki (Greek yogurt and cucumber sauce)

A traditional Greek recipe for tzatziki, a sauce made with yogurt, cucumber, garlic and aromatic herbs. Perfect with Mediterranean dishes or as a refreshing dip.

Equipment

  • 1 coarse grater
  • 1 colander
  • 1 bowl to mix
  • 1 Wooden spoon
  • 1 airtight container for storage

Ingredients
  

  • 400 gr Greek yogurt thick
  • 1 medium cucumber grated
  • 2 cloves of garlic crushed
  • 2 T to s. olive oil extra virgin
  • 1 T to s. white vinegar or lemon juice
  • 2 T to s. dill or mint chopped

Instructions
 

  • Prepare the cucumber: Grate the cucumber and place in a colander. Sprinkle with salt and leave for 10 minutes to extract excess water. Then press the grated cucumber into a clean cloth to remove any remaining moisture.
  • Mix ingredients: In a bowl, combine the Greek yogurt, grated cucumber, crushed garlic, olive oil, vinegar (or lemon juice), dill or mint, salt and pepper. Mix well until smooth.
  • Let stand: To allow the flavors to marry, cover the bowl and let stand in the refrigerator for at least an hour before serving. This will make the tzatziki even tastier.
  • Serving: Before serving, stir the tzatziki and adjust the seasoning if necessary. Serve fresh, with pita bread, raw vegetables, or as a sauce for grilled meats or fish.
