Thanks to its unique microclimate, the olive trees benefit not only from optimal sunlight, but also from nutrient-rich soil. As a result, the fruit develops exceptional aromatic intensity. What’s more, our growers cultivate the trees without chemical fertilizers, in keeping with traditional methods.
Cold-pressed to preserve freshness and quality
The olives are harvested by hand, then immediately transported to the family mill. There, they are mechanically cold-pressed, never exceeding 27°C. This gentle method not only preserves the antioxidants, but also ensures low acidity. As a result, the oil retains all its nutritional richness, while keeping its aromas intact.
